We’re looking for a Lead Brewer who brings formal brewing training, a strong work ethic, and the willingness to get properly stuck in across all areas of production. About the Role

The Lead Brewer will take a hands-on role in every stage of the brewing process. You’ll work closely with the Head Brewer to maintain consistency, uphold quality standards, and keep the brewhouse running efficiently.

Key Responsibilities

  • Lead daily brewing operations: wort production, cellar work, dry hopping, transfers, and CIP
  • Oversee fermentation management, yeast handling, and quality control
  • Support packaging operations when required
  • Maintain and improve SALSA and HACCP systems across the brewery
  • Ensure all production activities meet food safety and compliance standards
  • Collaborate on recipe development and seasonal releases
  • Maintain accurate brewing records and documentation
  • Train and support junior team members
  • Contribute to general brewery duties with a positive, can‑do attitude

Required Qualifications & Experience

  • Formal brewing qualification (e.g., IBD Diploma, Heriot-Watt Brewing & Distilling degree, or equivalent)
  • 2–3 years of professional brewing experience
  • Strong understanding of brewing science, fermentation, and QA/QC
  • Demonstrable experience working within SALSA and HACCP frameworks
  • Hard‑working, reliable, and willing to get stuck in wherever needed
  • Physically capable of the demands of brewery work (lifting, climbing, manual handling)

Desirable Skills

  • Recipe development experience
  • Packaging line familiarity (canning, bottling, cask racking or kegging)
  • Sensory analysis training
  • Passion for craft beer and innovation
